Braised Leeks in White Wine with Thyme
Slow-baked leeks in white wine, garlic, and lemon turn silky and tender. An easy make-ahead Christmas side dish that serves 4 and goes with any roast.
Braised leeks are soft, sweet, and lightly tangy from wine and lemon. They bake mostly on their own, which frees up your stovetop on a busy holiday. Serve them next to any roast.
Tips for Success
- Wash the leeks after cutting. Whole leeks hide a lot of sand.
- Cook the green slices slowly until soft so they melt into the sauce.
- Cover the dish with parchment and foil so the leeks steam and stay tender.
- Use a dry white wine you would happily drink, like Sauvignon Blanc.
Make-Ahead and Storage
Cook the leeks completely up to 2 days ahead and keep them covered in the fridge. Reheat in a 350°F oven for about 15 minutes. Leftovers keep for 4 days.
Variations
- Finish with grated Parmesan and broil for 3 minutes until golden.
- Stir in a spoonful of Dijon mustard before serving.
- Top with toasted breadcrumbs for crunch.

Ingredients
Instructions
- Heat the oven to 375°F.
- Cut off the roots and the tough, dark green outer leaves of the leeks. Separate the pale white parts from the lighter green tops.
- Slice the green tops thinly. Cut the white parts into 1-inch pieces.
- Put all the leeks in a big bowl of cold water and swish them around. Dirt hides between the layers and sinks to the bottom. Lift the leeks out and drain them.
- Melt the butter with the olive oil in a large skillet over medium heat. Add the garlic and cook for about 1 minute, until soft and fragrant.
- Add the sliced green leeks. Turn the heat down to medium-low and cook for about 15 minutes, stirring now and then, until very soft.
- Add the white leek pieces and stir to coat them in the buttery mixture. Season with salt and pepper.
- Move everything to a baking dish (an 8-inch square dish or similar works well).
- Pour in the lemon juice, wine and stock, and tuck in the thyme sprigs.
- Cover the dish with a sheet of parchment paper, then a sheet of foil. The parchment keeps the foil from touching the acidic liquid.
- Bake for 35 to 40 minutes, until a fork slides into the white pieces with no resistance.
- Taste and add more salt if needed. Serve warm with some of the cooking liquid spooned over the top.
